Yes, I know it sounds way too good to be true but please try it before completely deciding that they’ll taste like dirt (I promise they won’t! They don’t have any kind of flour!).
I know it’s kind of contradicting that during the week I’m always posting about pizza, cookies and huge sandwiches, and now I’m coming here to share about this amazing guilt-free recipe with no sugar added and super low carb, but I think life is all about balance, so I take good care of what I eat when I’m at home (with cauliflower rice and zucchini recipes) so when we go out, I can really enjoy my food and not feel guilty about it. And even then I don’t usually eat everything I get, but share it with G so we can get a taste of more things on the menu.
Anyway, the thing is no matter how many low carb recipes I try, and how many pancakes I make, I’m always craving chocolate for dessert, specially a big piece of chocolate cake. Anyone else can relate?
I’ve been trying many different healthy dessert recipes with little to no success because they either didn’t come up looking as good as the picture, or they just tasted like dirt. Yes, we’ve all been there. And then I stumbled upon Sascha Fitness’ recipe book!
She’s my favorite fitness guru and she’s always sharing healthy recipes that you can incorporate into your daily life and not feel like you’re depriving yourself from one of the greatest pleasures in life: eating yummy food. And when she talked about a cake recipe that required no flour and no sugar, I was completely sold!
I’ve tried her original recipe many times and lately I’ve been modifying it to my taste. It’s not that I don’t like hers, it’s just that I love experimenting! So I’m going to share with you my own take on her flourless cake, and I decided to make them as flourless cupcakes instead. Let’s bake!
- 3/4 cup of melted nut butter. I like to use peanut butter, cashew butter or almond butter equally, I don’t really have a favorite. Sometimes I don’t have enough of one so I’ll just mix two to make the whole 3/4 cup. Whatever you want to pick works fine!
- 250g dark chocolate (Melted) You could also use regular milk chocolate but that one does have sugar so keep that in mind if you’re making these because of the ‘sugar-free’ part! I use any dark chocolate that’s 70% cacao or more.
- 3 eggs
- 1/2 cup cacao powder
- 1 tsp baking powder
- 3/4 cup baking stevia. I’ve only used stevia but you can try by replacing this with the sweetener of your own choice. If you do, please let me know how it goes!
That’s it! You should preheat your oven at 375F and have a cupcake mold or any cake mold at hand.
First you need to start by mixing the melted dark chocolate and the nut butter. Once that’s done, you can start incorporating the stevia. By this point it gets a little tricky to mix it but it’s completely doable, I really like mixing all of this with a mixing spatula.
Now you should add the eggs, cacao powder and baking powder. The eggs should make it easier for you to mix everything together! And now you’re done!
At this point you can start customizing your cupcakes with anything you like. I really enjoy adding peanuts and chocolate chunks into the mix to get those ‘surprises’ whenever I take a bite, but it’s a matter of personal preference.
When you’re done, you just put that into the cupcake mold (enough for at least 6 cupcakes) and put them in the oven for no more than 20 minutes! I’d recommend that you start checking them at 15 minutes because every oven works in different ways, just don’t let them in for too long because that will make them dryer.
That’s pretty much it! This is seriously the easiest recipe and they taste amazing. It’s my favorite alternative when it comes to healthy desserts so I always try to bake some and keep them around, they don’t usually last more than 4 days because even G, that doesn’t like anything that sounds remotely healthy, loves them! I think that says a lot, right?
